Huevos Rancheros, Mexico

Huevos Rancheros translates to “Rancher’s Eggs,”  thanks to the origin of the dish in Mexico’s farms. They are supereasy to dish up, and there is no fixed recipe. Just toss together refried beans, salsa, chopped bell peppers and of course fried eggs. Add or subtract whatever you like: interesting additions could include corn tortillas, cheese, bacon, rice, mashed potatoes…Make them as mild or spicy as you like.
